His curiosity about the renowned greenshell mussels takes him to Havelock, a hub for an industry generating over $300 million annually. Next, he travels to the coastal town of Kaikoura, which translates to “a meal of crayfish” in Māori. Inspired by Akaroa's French heritage, Adam decides to reimagine the traditional lobster Thermidor with a contemporary twist.
