In the opening episode of Season 3, Christopher Kimball heads to Oaxaca, Mexico, where he meets Jesús Ochoa, the sous chef of Criollo Restaurant. Together, they dive into the art of preparing Carnitas. Christopher then visits La Olla, where he receives a lesson from Pilar Cabrera, the owner and head chef, on how to create Tlayudas.
