Guy's rolling up his sleeves and diving into some serious barbecue. In Dallas, he hits a spot tucked inside a farmers' market, serving up classic beef brisket and Carolina-style pork. Then, just outside Las Vegas, he stops at a longtime meat market where the crew's crafting fresh sausage and slow-cooked ribs.
